19 oz.can of garbanzo beans (chick peas) drained
1 cup diced english cucumber, with peel
1 1/3 cup roma tomatoes, diced
1/4 cup finely chopped red onion
1/2 cup diced green pepper
1/4 cup sliced ripe olives

Feta Cheese Dressing
2 tbsp 1% buttermilk
1 tsp olive oil
2 tsp chopped fresh oregano or 1 tsp dried
1 tbsp chopped fresh parsley or 2 tsp flakes
1/2 cup light feta cheese, crumbled
sprinkle black pepper
1 tsp grated lemon peel (or juice)
1 - 2 garlic clove minced (1/4 tsp powder)

Combine first 6 ingredients in large bowl. Makes 6 cups vegetables.

Feta Cheese Dressing: Process all 8 ingredients in blender until quite smooth. Makes 2/3 cup dressing. Add to vegetables. Toss to coat. Chill for at least 1 to 2 hours to blend flavors
