4 c. chopped rhubarb
3 egg yolks
3 tbsp. cream
1 c. brown sugar
4 tbsp. flour
dash of salt
10 in. unbaked pie shell
butter
3 egg whites
6 tbsp. sugar

Directions:
Directions:
Combine yolks, cream, brown sugar, flour and salt. Put rhubarb into unbaked pie shell and pour egg/sugar mixture over rhubarb. Dot with butter and bake 10 minutes at 450º. Reduce oven temperature to 300º and bake 20-26 minutes more or until pie seems firm.

Meanwhile, beat egg whites with sugar until stiff. Remove pie from oven and spread meringue over top. Bake at 325º until peaks are golden.
