3 lbs red potatoes (new are great if you have them)

1/4 C vinegar white
2 TB olive oil
salt/pepper/dill weed/parsley
1/2 C red onion
1/2 C celery
1/2 dill pickle relish (optional)
1C mayo
3 TB Dijon mustard
2-3 hard boiled eggs

Directions:
Directions:
Peel (not if new) potatoes and cut into bite sized cubes. Cook in water until just tender. In a bowl, pour in oil & vinegar and spices and add well drained hot potatoes. Let this sit until cool.
Add remaining ingredients
might need more mayo
