1 Package (8count) of "Reisers" Burritos
1 Bag "Vigo" Mexican,Black Bean or Red Bean rice mix
3 Cans of diced tomatoes (2 "chili ready", 1 plain)
2 Cups (approx) taco chips


Directions:
Directions:
Prepare the rice, following the package directions
Slice the burritos crosswise (about 4-5 slices per burrito) and lay them in a greased 9x13 pan
Spread prepared rice mix loosely over the burritos
Mix the 3 cans of tomatoes and pour evenly over the rice
Crush the Taco chips and spread over casserole
Bake for 30 mins at 350 or until heated through
Serve with Salsa and Sour cream
Variations: Add frozen corn, cheese, olives, beans

Use more or less spicy tomatoes to taste

This is a family favorite especially with teenagers, I use the bean and cheese burritos to make it vegetarian friendly
It is very flexible, you can use a smaller casserole, just adjust the ingredients.
