8 chicken thighs (6 without skin/ 2 with skin)
1 med. Onion chopped

Sauce
1/3 c. white wine
1/3 c. soy sauce
2T tomato paste
2 t. gr. Ginger
2 t. mustard powder
2 T brown sugar
1 clove garlic crushed

Directions:
Directions:
1. Oven 400F - Best baked in stone cookware or dark casserole
2. Layer onions on bottom of roasting pan. Layer thighs on top of onions. Lightly brush thighs with olive oil and salt & pepper to taste.
3. Bake thighs 30 mins.
4. Mix all sauce ingredients together thoroughly with fork
5. Pour oil off of cooked chicken.
6. Pour Sauce onto thighs.
7. Cook 25-35 mins at 400 F. Can continue cooking for up to 1 ½ hours depending on your preference. Cover with foil if necessary during final cooking time
