3 eggs
2/3 c Vegetable oil
3 tsp Vanilla extract
2 c unbleached all-purpose flour
1 c Sugar
2 tsps baking powder
1 1/2 tsps ground cinnamon
1 tsp baking soda
1 tsp salt
1 c chopped walnuts or pecan's (optional)
2 medium apples, peeled and finely chopped (opt)

Directions:
Directions:
Preheat oven to 350º. Grease two 9X5" loaf pans. In a large mixing bowl, beat together the starter, eggs, vegetable oil, and vanilla. Add the dry ingredients and blend. Fold in the nuts and apples and transfer the batter to the prepared loaf pans. Bake for 50 minutes and remove from the oven. Allow the bread to cool for 10 minutes, then tip out onto rack to finish cooling.
