1/2 cup shortening
1 cup sugar
2 eggs
1 cup ripe bananas, mashed
1 tsp lemon juice
1 cup sifted flour
3 Tbsp baking powder
1 cup nut meats
1/2 tsp salt

Directions:
Directions:
Cream shortening and sugar together . Beat eggs until light. Press bananas through sieve and add lemon juice. Blend with creamed mixture. Sift flour, baking powder and salt together and mix quickly with banana mixture. Add nuts. Bake in a greased loaf pan at 375º for about 1 hour and 15 minutes.

Mother loved banana nut bread. I can remember making it with my Aunt Brenda to surprise her for her anniversary one year.
