Ingredients: Take a fresh filet of fish and put it on a micro - wavable dish. Cut slices about one inch apart from each other against the grain of the fillet. The cuts should not go all the way through the filet only half way deep, just deep enough to make seasoning and butter canals on the top of the filet so the seasoning and butter can melt into the meat when cooking. After cutting channels on the top of the filet spread soft butter over the entire top of the filet and put extra butter in around the filet in the dish. You'll need to equally spread and sprinkle five items in this order on top of the filet. #1 Lemon juice #2 Lemon pepper #3 Garlic salt #4 Old Bay Seasoning #5 Everglades Seasoning Once you have those five items distributed evenly on the top of the filet, place a paper towel over the dish and cook it in the micro-wave for four or five minutes. Your filet should come out moist but flakey, and so good it will make you break dance. Below are the fish I've caught and made into a micro wave fish dish meal. The recipe was invented more out of necessity than ingenuity, because I'd be fishing in some small town or country staying in a small hotel,motel,or resort with nothing but a micro wave in the room, and being the fish lover I am one time I was so hungry to try this Hog Snapper filet I had, I was either going to build a fire and cook it on a stick or put it in the micro wave.
