2 bags Chatham Hill Stuffing (Wild Oats)
2 sticks butter
(or 16 T. Earth Balance natural buttery spread)
2 1/3 c. chopped celery
2 1/3 c. chopped sweet onion
2 Granny Smith apples, peeled, cored, chopped
3 oz. chopped dried cranberries
3 oz. chopped dried cherries
2 eggs, beaten
2 c. broth (broth from boiling turkey neck, giblets, etc.or broth from baking turkey breast ahead)
1/2-3/4 tsp. salt
1/4-1/2 tsp. pepper

Directions:
Saute celery, onion, butter in large skillet.
Add apple and continue to cook until onion is transparent.
In lg. mixing bowl mix Chatham stuffing, dried cranberries & cherries
Add sauteed mixture and stir well
Add beaten eggs
Add 1-2 c. turkey broth until moist but not gooey
Add Salt and pepper to taste
Bake in lg. buttered, covered pyrex casserole. Baste with broth during baking if needed.
350º for approx 1 hr.
Uncover last 10 minutes- brown on top
