3 c. flour
2 c. sugar
1 tsp. each baking powder, baking soda, salt, cinnamon and nutmeg
4 eggs, lightly beaten
1 1/3 c. vegetable oil
1 1/2 tsp. vanilla
1 can (8oz.) crushed pineapple, undrained
2 c. mashed ripe bananas (3-4)
1 1/2 c. chopped walnuts
Confectioners' sugar

1. In a large mixing bowl, combine dry ingredients. Beat in the eggs, oil and vanilla. Fold in pineapple, bananas and nuts.

2. Pour into a well-greased 10- in. tube pan. Bake at 350 for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 15 minutes before removing to a wire rack to cool completely. Dust with confectioner's sugar.

++ I put foil under angle food pan to catch the oil and batter and then there is no clean up.
