1 pkg (15 ounce) refrigerated prepared pie crust (2 crusts)
2 lbs. Fresh peaches or 1 bag (16 oz) frozen peaches thawed and drained
4 Tbsp. Sliced almonds chopped
½ c light brown sugar
3 tsp vanilla extract
¼ to ½ tsp almond extract
¼ tsp salt
1 egg
1 Tbsp granulated sugar

Heat oven to 400. Fit one crust into 9-inch pie plate. Refrigerate until ready to use. If using fresh peaches; drop whole peaches into boiling water for 1 –2 min. Peel skin and remove pit. Slice into eighths. In a large bowl, mix together the peaches, 3 Tbsp of the chopped almonds, the brown sugar, cornstarch vanilla extract, almond extract and salt. Spoon peach filling into chilled crust. Cut remaining crust into 1 inch wide strips; weave strips in a crisscross lattice over filling. Fold lattice strips under edge of bottom. Bake @ 400 for 10 min., then 375 for 50 minutes.
