1 large head cabbage, discard outer leaves
1/2 cup carrot, chopped
1/4 cup sweet onion, chopped
1 cup mayonnaise
1 1/2 tsp salt
1/2 tsp black pepper

Directions:
Cut cabbage into sixths; remove core. Cut each section into quarters. Place a portion of the cabbage in a blender until full; cover with water. Pulse 8 to 10 times or until cabbage is finely chopped. Pour into a fine sieve and drain. Repeat with remaining cabbage, adding the carrot and onion to one batch on the bottom of the blender. Squeeze cabbage until dry. Combine prepared cabbage, mayonnaise, salt, and pepper in a large mixing well. Cover and chill for at least 4 hours or overnight.
