Salad:
2 bags baby spinach, washed and dry
1 lb. strawberries, sliced
2 c. whole pecans
Red onion, sliced thin
Dressing:
1 c. sugar
1 1/2 t. dry mustard
1 t. salt
1/2 c. vinegar
1 T. onion juice
1 c. + 3 T. oil
1 1/2 t. poppyseeds

Directions:
Directions:
Place pecans on small fry pan and toast under medium heat, just until you start to smell them. Sprinke with cinnamon and let cool. Layer spinach, strawberries, red onion and cinnamon pecans. Then do another layer of spinach, strawberries, red onion and cinnamon pecans. Drizzle with dressing before serving.
Dressing:
In small saucepan, heat sugar, dry mustard, salt and vinegar until sugar is dissolved. Pour into a blender and gradually add in onion juice, oil, and poppyseeds until well combined. Chill.
