1 cup diced celery
1/4 cup diced onion
1/2 cup water
4 slices bacon
2 tablespoons bacon fat
1 tablespoon butter
2 tablespoons flour
1 cup leftover mashed potatoes
3 cups milk
salt and pepper

Directions:
Directions:
Combine celery and onion in heavy saucepan. Add water. Simmer until just tender. Set aside. Brown bacon and drain. Set aside. Combine bacon fat, butter and flour in heavy skillet. Blend thoroughly. Gradually add potatoes and milk, alternately to flour mixture, blending constantly with wire whisk. Heat just to boiling point. Add celery mixture and bacon which were set aside. Season to taste with salt and pepper.
