2 quarts fresh strawberries, cleaned, with stems removed
1/4 fresh squeezed lemon juice
1 package powdered pectin
7 cups sugar

Directions:
Crush strawberries one layer at a time. Combine strawberries, pectin and lemon juice in a large saucepot. Bring to a boil, stirring frequently. Add sugar and stir until dissolved. Return to a rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat and skim foam if necessary.

Ladle hot jam into sterilized jars, leaving 1/4" headspace. Put lids on and process 10 minutes in a hot water canner.

I make this once a year using fresh picked strawberries from Moll's Berry Farm in Battle Lake. Use fresh squeezed lemon juice for this recipe.
