1 can cream of chicken soup
2 lbs. frozen shredded hashbrowns
1-8 oz. container Top the Tater sour cream w/ chives
2 cups shredded cheddar cheese
1 stick melted butter
1 cup chopped onions (optional)
Salt & pepper, to taste
Shredded Parmesan cheese, to taste

Mix together the soup, sour cream, melted butter, salt and pepper, onions and cheeses. Pour over the shredded hashbrowns and mix to coat. Spread mixture into a greased 9"x13" pan and bake uncovered at 350 for about 45 minutes. It should be golden brown.

I've made many variations of this recipe, but this is the original recipe I got from a friend at work years ago. It can also be cooked and served in a crock pot.
