Ingredients:  
• 4 lbs. Fresh or frozen, peeled and deveined shrimp
• ¼ C. Orange Marmalade
• ¼ C. Honey
• 2-3 tsp. Cajun seasoning
• 1 Tbsp Olive Oil
• ½ C. Pineapple chunks
• 2 cups steamed white rice

Directions:

• Place thawed shrimp in shallow bowl and combine with oil and about 1½ - 2½ tsp. of Cajun seasoning. Marinate for about 1 hour.
• Drain the shrimp and discard leftover marinade. Sautee shrimp in pan until fully cooked.
• Serve shrimp on top of hot steamed white rice.
• Drizzle with sauce—marmalade, honey, pineapple chunks, and ½ tsp of Cajun Seasoning warmed/melted in sauce pan for about 2-3 minutes.
