1/2 c mayonnaise
3 Tsp vinegar
1 Tsp sugar or substitute
4 c coarsley shredded zucchini
1/4 c green onions, thinly sliced
2 - 3 med sized red or green skinned tart apples
pepper/salt to sease
(I use one garlic pepper)
1 tsp caraway seeds

Directions:
Directions:
Combinemayo, vinegar, sugar and seeds. Mix until well blended. In a large gowl, combine zucchini and onions. Core apples, peel if desired and cut into 1/2 inch chunks. Add apples to zucchini. Pour dressing over salad and mix until lightly coated. Season with pepper, etc. Cover and refrigerate at least 2 hours or up to four hours. With a slotted spoon, transfer salad to a serving bown.
