2 cups cubed cooked chicken breast
1/4 cup diced celery
1/4 cup golden raisins
1/4 cup dried cranberries
1/4 cup sliced almonds
3/4 cup mayonnaise or salad dressing
2 T. chopped red onion
1/4 t. salt, optional
1/4 t. pepper
4 croissants, split

Directions:

In a bowl, combine the first nine ingredients. Spoon about 1/3 cup into each croissant.
