Cinnamon Rolls Recipe

Requires 2 days for making.
Grease a cookie sheet. Preheat oven to 375º.
Mix together in a small bowl and let sit:
3 tbsp. warm water
2 1/4 tsp. dry yeast

Put in a one cup glass measuring cup:
3/4 cup milk
2 tbsp. margarine
Put the glass measuring cup with its ingredients into a microwave and microwave for 40 seconds.

Put into an electric mixer bowl:
1 c. flour
1/4 c. sugar
1/2 tsp. salt
Mix in the yeast mixture and the milk mixture on low speed. Turn the mixer to medium speed and mix for 2 minutes.

Add:
1 egg
1/3 cup flour

Beat again for 2 minutes.

Stir in:
1 1/4 c. flour

Turn out on to a lightly floured counter. Dust the top of the dough with a little flour. Knead for 8 to 10 minutes. Put in a greased bowl twice the size of the dough so it can rise. Cover with plastic wrap and refrigerate.



Day 2
Punch dough down. Knead a little bit to warm up. Roll out to a 9 in. x 15 in. rectangle. Brush with 2 to 3 tbsp. melted margarine leaving one long edge plain. Sprinkle on about 1/2 c. sugar and about 1 tsp. cinnamon. Roll up to the plain edge and seal by pinching the long edge. Cut dough with a string into 8 to 10 pieces. Place on greased cookie sheet. Let rise for 20 minutes (very important). Bake for about 20 minutes.

ICING
Mix together:
1 c. powdered sugar
2 tbsp. soft margarine
1/2 tsp. vanilla
1 to 2 tbsp. milk
It should be fairly thick to put on the hot rolls.
