In a large sauce pan saute:
3 oz diced bacon
3/4 C diced carrots
3/4 C diced onions
3/4 C diced celery

Stirring constantly add:
3/4 C flour
When flour has blended with the above mixture, slowly add 3 1/2 qts water stirring constantly.

1 C dry lentils
1 tsp salt
2 bay leaves
1 tsp white thyme
4 tbs beef base
1 pinch nutmeg
pinch white pepper
3/4 C diced potatoes

Simmer 3-4 hours.
