1 large veal shank with meat on 2 lbs. pork shoulder 2 lbs. pork shanks 1 1/2 tbsp. salt 1 tbsp. pickling spice 1 onion, chopped 2 small cloves of garlic put on a toothpick 1/2 c. vinegar 2 tbsp. plain gelatin
Rinse meat and cover with fresh water to cook. When it cooks, skim off the scum, then add the salt. pickling spices, onion, and garlic. cook until meat is very well done and juice has cooked down as well. strain off all spices and add the vinegar then mix the plain gelatin and add the hot juice. Cut meat very fine and add to juice, put in bread pans and refrigerates.
