4 bone-in chicken breast halves
1 cup low-fat buttermilk
1 cup all-purpose flour
1 t. salt
1 t. paprika
1/2 t. black pepper
2 T. canola oil

Directions:
Directions:
Remove skin and any visible fat from chicken. Trim cartilage and rib bone tips. Put chicken in shallow baking dish and add buttermilk. Cover and refrigerate at least 1 hour or up to 8 hours, turning chicken occasionally. Preheat oven to 400. Lightly coat 13 x 9 baking pan with nonstick cooking spray. Combine flour, salt, paprika, and black pepper in a heavy plastic bag. Shake chicken, two pieces at a time, in seasoned flour. Heat oil in very large nonstick skillet over medium-high heat until hot but not smoking. Brown chicken in skillet until golden brown, about 4 minutes on each side. Put in baking pan and transfer to oven. Bake, uncovered, until chicken is crispy and juices run clear, about 15 minutes on each side.
