1 pkg (8oz) neufchatel/cream cheese
1 cu sour cream
1/4 cu sugar (brown adds a more sublte sweetness)
1 can apricot halves, drained (17 oz)
1 can crushed pineapple, drained ( 8 3/4 oz)
1 can pitted dark sweet cherries (16 oz)
*(optional) 1 cu mini marshmallows (or substitute nuts of some kind...almonds or pecans work well)
(if not using mallows, be sure to add a bit (1/2 - 1 tsp.) of vanilla or concentrated frozen juice...you can add it with the nuts, of course, too, for a more confectionary flavor.)

Beat cheese, blending in sour cream, sugar and salt on low speed (+ vanilla/juice). Stir in fruits and mallows/nuts. Freeze in a bundt pan 8(+) hours. Soften by placing pan in warm water for a short time and turn out on a bed of greens (pretty lettuce or parsely)

[You can decorate around it with flowers, you can use frozen berries in it too, or any other canned fruit such as mandarin oranges...be creative. Works well as a dessert too.] Cut into wedges...you can also pour it into muffin papers in a cupcake tin and freeze and make individual servings, or in loaf pans, small or large, or in small tart pans (hearts work well for Valentine's day, for example)...great for holidays and for showers or birthdays...
