1 cup boiling water
1/2 cup finely snipped dried apricots
1 cup all-purpose flour
1/2 t. baking powder
1/4 t. baking soda
1/4 cup butter or margarine
1/2 cup packed brown sugar
1 egg
1/2 t. finely shredded lime peel
1 T. lime juice
1/2 cup milk
1/2 cup finely chopped walnuts
1 recipe Lime Frosting

Directions:

Pour boiling water over dried fruit to cover; let stand 5 minutes. Drain and set aside. Stir together the flour, baking powder, and soda. In a small mixer bowl beat butter or margarine for 30 seconds. Add brown sugar; beat until fluffy. Add the egg, lime peel, and juice; beat well. Add dry ingredients to beaten mixture alternately with milk. Fold in walnuts and fruit. Spread evenly in a greased 12 x 7 1/2 inch baking pan. Bake in a 350º oven for 25 - 30 minutes or until done. Cool on wire rack. Frost with Lime Frosting. Cut into bars to serve.
Lime Frosting: In a small mixer bowl beat together 1 1/2 cups sifted powdered sugar, 1 T. softened butter or margarine, 1 T. lime juice, and 1/4 t. finely shredded lime peel. Add enough milk (about 1 T) to make of spreading consistency.
