1 (3 1/2pound) chicken, cut into serving pieces
2 tablespoons butter
1 tablespoon olive oil or vegetable oil
1 onion, finely chopped
1 clove garlic, crushed
3 tablespoons flour
1 cup white wine
1 cup chicken broth
1 tablespoon tomatoe paste
2 ripe tomatoes, peeled, seeded and chopped
½ teaspoon basil
1 bay leaf
¼ teaspoon salt
Freshly ground black pepper
2 tablespoons parsley, finely chopped

Directions:

Brown chicken in combined butter and oil.
Transfer chicken pieces to a casserole. In the same skillet, sauté onion and garlic for 3 minuts until softened. Stir in flour and add wine and chicken broth gradually. Add tomato paste, tomatoes, basil, bay leaf, salt and pepper.
Cover casserole and cook 45 minutes in 350 degree oven.Garnish with parsley.
