1 lb chicken tenders
1/4 onion slivered
1 clove garlic minced
1/2 cup potatoes (1 inch cubes)
1 T curry powder (may use paste)
1 can coconut milk (thick & creamy)
2 T soy sauce
chopped peanuts for topping

Directions:
Directions:
Saute' chicken, onions, garlic and onions til nearly done. Stir in coconut milk and curry powder or paste. If needed milk may be used to correct consistency. When done, add 2 T soy sauce. Serve over rice and top with chopped peanuts. See note.

If desired, in addition to peanuts, pineapple, raisons, banana slices etc may be used for topping.
