"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

giblets from turkey 2-3 tablespoons flour 1 cup warm water salt and pepper
Cook giblets until tender covered in water (maybe 2 cups). In separate bowl mix 2-3 tablespoons flour with 1 cup of warm water. Force through strainer into giblet juices. Salt and pepper to taste. Cook slowly until bubbly and thickened.
Mimi always had this with her yummy dressing at Thanksgiving around her big dining table. Of course, the kids had to sit at the kids' table and I doubt any of us ate the gravy. But as an adult, I have come to love Mimi's gravy on our traditional cornbread dressing.
