1 can coconut milk
1 T red curry paste
dash fish sauce
salt to taste
1 lb chicken tenders sliced thin
1/4 onion sliced
1/4 each red & green pepper sliced thin
1 stalk sliced celery
Add cooked vegetables of choice chunked (potato, squash, carrot, sweet potato etc)
Cooked rice

Directions:
Saute' chicken until done. Cook vegetables until done. Heat coconut milk and whisk in curry paste and add fish sauce, salt & pepper. Add vegetables and chicken to sauce and serve over rice.
