Place peaches into a pan of hot water for 1 minute. Remove into ice cold water and peel. Place into jars and add about 1/3-1/2 cup sugar, or a little more, depending on the fruit. Then fill the jar with hot water. Clean the lip of the lid and place on the rings. Rings and lids must be boiled for 1 minute. Cook peaches in jars at a full boil for about 22 minutes.
