cherry tomatoes,
lettuce leaf basil or just regular basil broke into pieces the same size of the tomato,
bocconcini cheese or mozzarella
1 c. balsamic vinegar
1/4 cup honey

Directions:
Directions:
on medium high heat, boil balsamic vinegar in small pot, stirring occasionally. Continue to reduce vinegar until darker in colour and a bit thicker in texture,approx 15-25 minutes. While boiling, slice tomatoes in half and place cut side up (cut ends off if needed so tomato will sit still)
place piece of basil on top of tomato,
place piece of cheese that is cut the same size as tomato on top of basil,
Stir honey into reduced vinegar and then turn off oven to cool mixture. Then, drizzle balsamic reduction on top of tomato basil mozza tower. Enjoy!

can modify recipe to roma tomatoes, or even sliced beefsteak tomatoes as a dinner side!
