Boil 10 eggs
Cut in half and take out yellows
Mash yellows
Add salt and pepper
Add 1 tsp vinegar
Add mayo to get the right consistency

Variations:

Add chopped pickles, onions, chopped olives, paprika, cayenne pepper, mayo, mustard…throw in the kitchen sink if you want to.
