24 fresh red mild cherry peppers
1 egg slightly beaten
1/2 cup whipping cream
1/4 cup finely chopped fresh mushrooms
1 green onion (2 Tbls)
1/2 tsp dijon-style mustard
1/4 tsp salt
1/8 tsp pepper
1/3 cup shredded Swiss cheese

Preheat oven to 375º. Cut off tops off peppers. Use small spoon to remove seeds. Place each pepper in mini muffin pan; can use a piece of foil to keep pepper upright. In a small bowl, stir together egg, cream, mushroom, onion, mustard and salt and pepper. Spoon about 1 1/2 tsp of mixture into each pepper. Sprinkle tops with Swiss cheese. Bake for 15 minutes or until golden brown. Cool 5 minutes. Serve warm.
