3/4 c. butter, softened
1 c. sugar
1 egg
2 c. flour
1/2 tsp. vanilla
3/4 c. cocoa
1 tsp, baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. milk

Filling:
3 T. butter, softened
1 T. milk
1-1/2 c. powdered sugar
1/4 tsp. peppermint extract
2-3 drops green food coloring

Directions:
Directions:
In a large mixing bowl cream butter & sugar. Add egg & vanilla; mix well. Combine flour, cocoa, baking powder, baking soda & salt; add to creamed mixture alternately with milk. Shape into two 10-1/2" rolls; wrap each in plastic wrap. Refrigerate overnight.

Unwrap dough & cut into 1/8" slices. Place 2" apart on lightly greased baking sheet. Bake @ 325º for 9-11 minutes or until edges are set. Cool on wire racks.

Combine filling ingredients; beat until smooth. Add food coloring. Spread between 2 cookies.
