3 tbsp. olive oil
3 leeks or green onions
1 tbsp. fine lemon zest
3 garlic cloves
2 cans chickpeas (garbanzo beans)
1/4 c. parsley
1 tbsp. butter
1 tbsp. olive oil
1 tbsp. ground cumin
pinch red pepper flakes
white fish fillets (nile perch works well)

Directions:
Directions:
Heat oil over medium heat and stir fry onions and lemon zest about 4-6 minutes in olive oil. Add garlic and stir fry 30 seconds. Add chickpeas and cook 5 more minutes. In another pan over medium heat cook butter, olive oil, cumin and red pepper about 2 minutes. Add fish and cook until cooked through. Remove from heat and stir in parsley. To serve, divide chickpeas among serving plates and place fish alongside of it. Serve with lemon wedge.
