4 Artichokes
2 Cloves Fresh Garlic (crushed and minced)
1/4 Lemon
1 T. Olive Oil
1/2 t. Salt

Directions:
Prepare the artichoke by cutting off the top portion of the leaves (top 1/2 to 3/4 of an inch). Trim the stem and remove the small leaves along the bottom portion of the stem. Rinse. Rub top and edges of the leaves with lemon to prevent dis-coloration. Place artichokes in a large pot with a lid, stem side up. Add about an inch of water, with garlic, oil and salt, cover and simmer 35-45 minutes. Check done-ness by inserting a toothpick or fork into base of the stem. If you can insert it to the center with ease, it is done. Serve either warm of cold with Miracle Whip.
