1/2 lb. beef with bones or just beef bones.
1 qt. water
salt, pepper
3 bundles beets, peeled and sliced
juice of 1 lemon, divided
1 tsp. flour
3/4 c. sour cream

Directions:
Directions:

Cook the beef and water to make a broth. Add the salt and pepper to taste. Set aside. Sprinkle the beets with salt and set aside for 3 hours. Pour cold water over the beets. Boil the beets for 15 minutes. Add the lemon juice and a little sugar. Set aside for 1 hour. Skim off the beef broth and add to the beets.

In a separate pot dilute the flour with a little water and add the sour cream, sugar, salt and lemon juice. Serve hot with boiled potatoes.
