1 1/2 c. orzo
1/4 c. olive oil
Juice of one large lemon
1 tbsp. red wine vinegar
1/4 c. minced fresh parsley (I use more)
1/4 c. minced fresh dill (I use more)
1 1/2 c. cherry tomatoes halved
3/4 c. Greek olives
3/4 c. feta cheese crumbled
salt and pepper to taste

Directions:
Directions:
Cook orzo in boiling water for 12 minutes or until just tender. Drain and place in serving bowl, stir in 1 tbsp. olive oil and cool to room temperature. Whisk juice, vinegar and remaining olive oil and mix into orzo. Gently mix in other ingredients. Serve at room temperature. (Sometimes I also add chopped fresh basil.)
