4-5 lb. red potatoes unpeeled and boiled until just
tender.
1/2 lb. bacon diced (Hoffman's is best).
1 red onion diced 1 heaping tbsp. flour
1/2 c. white sugar 1/2 c. vinegar
1 1/2 c. water salt and pepper

Directions:
Directions:
Brown bacon. Add onions and saute until soft. Take off flame and stir in flour. Add vinegar, sugar and water. Return to flame and stir until thickened.
Slice potatoes, layer in a pan, salt and pepper and spoon sauce over potatoes. Continue layers until all potatoes are used.
Stir VERY gently so all potatoes are moist with sauce. Best made a day ahead. Serve at room temperature or slightly warmed.
