Stir into a bowl:
2 c flour
1 tsp salt
Make a well in the center, into which pour:
1 c whole milk
1 c water
Stir in the liquid. Beat until fluffy and add:
4 eggs
Continue to beat until large bubbles form and rise to the surface. Cover and refrigerate for at least an hour, preferable 4-6 hours prior to use.

2 Pyrex pie plates for cooking with 1/2 stick butter in each.

Remove pudding from refrigerator and bring back to room temperature. Preheat oven to 400º. Heat Pyrex plates in oven to melt butter. Beat the batter again until the bubbles rise to the surface. Pour 1/2 the mixture into each pie plate. Bake at 400º for 20 minutes, then reduce oven to 350º and bake 15 minutes longer. Serve at once.

This is a required and requested dish at my Christmas Eve table. It is fool proof and puffs up beautifully. Note it will not poof up if you do not bring it back to room temperature. Our old dog Buck loved any leftovers of this, but anyone who knows me knows that I made a special one just for him!
