3 T flour 1 tsp. ground cumin
1/2 t chili powder 1/4 t ground cinnamon
2 tbsp. veg. oil 1 c. beef broth
1/2 c. apple juice
1 1/2 lb. lean beef chuck cut into 1 inch cub
6 small white potatoes peeled and quartered
2 med. sweet potatoes peeled and cubed
1 med. green bell pepper and 1 medium red bell pepper cored, seeded and cut in 2 inch strips
1 med. onion sliced thin
1 10 oz. can tomatoes with green chilies
1 8 oz. can tomato sauce
2 tbsp. honey
2 granny Smith apples cored and cut into
1 inch cubes
1 15oz. can kidney beans, drained
2 tbsp. parsley
Shredded cheddar cheese for garnish
Coarsely chopped black olives for garnish
Directions:
Directions:
Combine flour, cumin, chili powder, garlic powder and cinnamon in a large bowl. Add the beef cubes and toss with a fork to coat.
Brown beef in batches in oil in heavy pot. Return beef to the pot. Add broth and apple juice. Cover and simmer until meat is tender, about 1 hour.
Add potatoes, peppers, onion, tomatoes with chilies, tomato sauce and honey. Cover and simmer until potatoes are tender, about 30-35 minutes.
Add apples and kidney beans, cover and simmer about 15 minutes.
Stir in parsley and serve in shallow bowls . Garnish with cheese and olives.
