2 red bell peppers
1 1/2 tsp. olive oil
1 1/2 tbsp. balsamic vinegar
1 clove garlic minced
salt and pepper to taste
3/4 lb. cherry tomatoes halved
1 c. mozzarella cheese cubed
1/2 cup fresh basil leaves cut into thin strips

Directions:
Directions:
Cut peppers in half lengthwise, remove seeds and ribs. Cut a thin slice on bottom so they sit upright in baking pan.
Whisk together olive oil, vinegar, garlic, salt and pepper. Add tomatoes, cheese and basil. Fill each pepper.

Bake at 375 for 40 minutes.
