2 red bell peppers 1 1/2 tsp. olive oil 1 1/2 tbsp. balsamic vinegar 1 clove garlic minced salt and pepper to taste 3/4 lb. cherry tomatoes halved 1 c. mozzarella cheese cubed 1/2 cup fresh basil leaves cut into thin strips
Cut peppers in half lengthwise, remove seeds and ribs. Cut a thin slice on bottom so they sit upright in baking pan. Whisk together olive oil, vinegar, garlic, salt and pepper. Add tomatoes, cheese and basil. Fill each pepper.
