Ingredients:  
6 tablespoons olive oil
1/4 cup white wine vinegar
1 teaspoon lime peel
1/4 cup fresh lime juice
1/4 cup chopped parsley
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cans (19-ounce) chickpeas, rinsed and drained
1/2 small red onion, chopped

Directions:
Directions:
Combine all ingredients except onion and beans in a shaker or small jar. Shake until well blended.

Toss half of dressing with beans and onions.

Save half of dressing for another salad, another day.
