4 T. Butter
1 lb. Domestic Mushrooms (thinly sliced)
1 Onion (sliced)
3 Cloves of Garlic (sliced)
Salt
Black Pepper
3 c. Chicken Stock
1 1/4 c. Heavy Cream
1 T. Fresh Thyme (chopped)
Fresh Lemon Juice

Directions:

Melt butter in large stockpot over medium-high heat. Saute mushrooms, onions, and garlic with salt and pepper until liquid evaporates, 10 minutes. Add chicken stock, cream, and thyme. Bring to a boil and remove from heat. Puree in batches in food processor or blender and pour back into pot. Do about half of it if you want some large pieces of mushroom. Bring just to a boil and season to taste with lemon juice, salt, and pepper. Serve hot.
