1/4 c fresh lemon juice
1tbsp. olive oil
1 tsp. butter
1/2 c. chopped parsley
1/2 tsp sugar
1/4 pepper
1 T chopped fresh rosemary
3 leeks(white part and 1/2 inch green part) cut in half
lengthwise and then sliced thin. *
5 ripe plum tomatoes cut in 1 inch pieces
1 lb. large shrimp,peeled and deveined

Directions:
Directions:
Saute leeks, parsley, rosemary and sugar in oil, butter and lemon juice on low-medium heat until soft.
Add tomatoes and cook covered until just soft.
Add shrimp, cover and cook until shrimp is just cooked through. Don't over cook.

Serve with flavored couscous.

* To clean leeks which can contain a lot of grit, put sliced leeks in a large bowl of cold water, swish vigorously with your hands, and remove with slotted spoon. All the grit will remain at the bottom of the bowl.
