3 eggs 1 cup vegetable oil 2 cups sugar 2 t. vanilla 2 cups shredded zucchini 1 cup crushed pineapple, well drained 3 cups flour 2 t. baking soda 1/2 t. baking powder 1 t. salt 1 1/2 t. cinnamon 1/4 t. nutmeg 1 cup chopped nuts 1 cup raisins
Beat eggs, oil, sugar and vanilla until thick and foamy. Stir in pineapple and zucchini. Combine flour, soda, baking powder, salt, cinnamon, nutmeg, nuts and raisins; gently stir into first mixture, just until blended. Bake in 2 greased and floured 9 x 5 pans at 350º 1 hour.
