1 (2 1/2 - 3 lb) frying chicken, cut in pieces
1 cup all-purpose flour
1 tbs poultry seasoning
1 tbs paprika
Salt and pepper to taste
Oil for frying

Directions:
Heat heavy cast-iron skillet. Wash chicken pieces thoroughly. Sprinkle the pieces with salt and pepper. Combine flour and other seasonings. Dredge the chicken pieces in the flour mixture to coat. Shake off excess flour.

Pour enough oil or shortening into a heavy deep cast-iron skillet to deep fry. Heat until a pinch of flour sizzles when sprinkled on top. Reduce heat to moderate and cook chicken in batches. Add a number of thicker pieces of chicken to the hot oil that will fit without touching each other. Cook and turn until brown and cooked through. Remove and drain. Cook remaining pieces. Serve best parts to the preacher!!!
