Beef roast from round or chuck
1 1/2c. white vinegar 1 1/2 c. water
1 T peppercorns 2 bay leaves
1 t. Kitchen Bouquet 1 T brown sugar

Directions:
Directions:
Boil vinegar, water, spices and brown sugar together.
Cool and pour over meat . Keep in brine 3 days, turning each day.
Pour off brine and SAVE. Drain beef and dry with towel.
Rub with flour and salt. Brown all sides with oil in Dutch oven.
Add 1 cup of brine with the peppercorns, bay leaves, and Kitchen Bouquet adding more brine as needed.
When cooked, strain the juices and thicken for gravy.

Traditionally in our family this was served with mashed potatoes, creamed carrots and rice sprinkled with sugar, cinnamon and cream.
