5 c. Shredded zucchini with peel
2 c. ground onion
2 1/2 tbsp. course pickling salt
1 sm. greed and red pepper (finely chopped)
1 1/4 c. white vinegar
2 1/2 c. white sugar
1 tbsp. celery seed
2 tsp. cornstarch
1 1/2 tsp. dry mustard powder
1 1/2 tsp. tumeric
1/4 tsp. pepper

- Combine zucchini, onion and salt in large bowl (cover and let stand overnight)
- Drain and rinse in cold water.
- Put in large pot and add remaining ingredients.
- Heat on med-high heat; stirring often until boiling
- Boil uncovered for 30 min, stirring occasionally
- Pour into hot sterilized jars to within 1/4" of top seal.

- Yields: 5-6 pints.
