½ c. all-purpose flour
¼ tsp. cinnamon
Pinch nutmeg
¾ tsp. baking powder
¼ tsp. baking soda
Pinch salt
1 tsp. sugar
1 egg, separated
¼ c. dairy sour cream
1/3 c. milk
¼ c. melted butter
½ c. mashed ripe banana
6 T. chopped toasted pecans

Directions:

Preheat waffle iron. In a bowl, combine flour, cinnamon, nutmeg, baking powder, soda, salt and sugar. In another bowl, combine egg yolk, sour cream, milk, butter and banana. Stir in the pecans and the dry ingredients: blend well. Beat egg white until stiff and fold into the batter. Bake until golden. Serve with a small scoop of ice cream and maple syrup
